Makeover Chicken Noodle Delight - Recipe

Makeover* Chicken Noodle Delight

Ingredients:

4 cups uncooked yolk-free noodles
1 can (10 3/4 oz) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
4 ounces reduced-fat cream cheese, cubed
1 cup (8 ounces) reduced-fat sour cream
1 cup (8 ounces) plain yogurt
1/4 cup fat-free milk
3 tbsp minced fresh parsley or 1 tbsp dried parsley flakes (we use dried parsley)
1 tsp onion powder
1/4 tsp salt
2 cups cubed cooked chicken breast
1 cup crushed reduced-fat butter flavored crackers (about 25 crackers) (We've used both Ritz & Club brand crackers.)
3 tbsp reduced-fat butter, melted

Cooking directions:

1.) Cook noodles to package directions. Meanwhile, in a large bowl, combine the soup, cream cheese, sour cream, yogurt, milk, parsley, onion powder and salt. Stir in the chicken.
2.) Drain noodles; toss with chicken mixture. Transfer to a 2-qt. baking dish coated with cooking spray. (We use olive oil in a Misto but I'm sure you could use Pam or spray butter.)
3.) Combine cracker crumbs and butter; sprinkle over casserole. Bake, uncovered, at 3508 for 40-45 minutes or until heated through.

Serves 6.
(We have this with a vegetable side.)

Sawyer & I love this recipe. We don't have it
often, since it's not incredibly healthy, but it's
super yummy.
We normally add extra crackers because we
like the flavor they add.

* Makeover means that someone submited a recipe
that was higher in fat / calories, and the magazine
found a way to make it healthier.

    1. We've been having a cauliflower dish that I need to post. It's really good, is about 8 servings and tastes good as left-overs. We do left-overs quite a bit & it's important that they taste good the second (or 3rd or 4th) time. :D
