Pineapple Pudding Cake
Found via Pinterest
Ingredients:
1 (8 3/4 ounce) can crushed pineapple
19 ounces yellow cake mix
1 (3 ounce) package cream cheese
1 1/2 cups milk
1 (3 3/4 ounce) package vanilla instant pudding mix
2 cups Cool Whip
3 eggs
1/3 cup oil
Baking Instructions:
1. Drain pineapple, reserving liquid.
2. Prepare cake mix according to directions subbing pineapple juice for water plus enough liquid to make amount of liquid needed.
3. Pour into greased fluted cake pan. (I made this as a sheet cake, and it came out nicely that way.
4. Bake at 350* for 25 to 30 minutes.
5. Cool.
6. Beat cream cheese until smooth and fluffy.
7. Gradually beat in milk.
8. Add pudding mix.
9. Beat 2 minutes on low speed, then fold in pineapple. Top with Cool Whip. (I mixed it all together: pudding, cream cheese & Cool Whip - I also used ALL of the Cool Whip.)
Serves 6.
This was pretty good.
I made it to take along to Chincoteague
I made it to take along to Chincoteague
and it was a hit with Sawyer's family.
It was moist and the pineapple flavor really came through.
