Peanut Butter Cupcakes with Chocolate Frosting - Recipe

Peanut Butter Cupcakes with Chocolate Frosting

Ingredients: 

1 box yellow cake mix with pudding in the mix
water, vegetable oil and eggs called for on cake mix box
3/4 cup creamy peanut butter
1 container (1lb) chocolate creamy ready-to-spread frosting
1/4 cup creamy peanut butter
1/3 cup chopped peanuts


Cooking Directions:

1.) Heat oven to 350* F. Place paper baking cup in each of 30 regular-size muffin cups. In large bowl, beat cake mix, water, oil, eggs, and 3/4 cup peanut butter with electric mixer on low speed for 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. Divide batter evenly among muffin cups.

2.) Bake 20 - 25 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes, remove from pan to cooling rack. Cool completely, about 30 minutes.

3.) In medium bowl, stir together frosting and 1/4 cup peanut butter. Frost cupcakes with frosting mixture. Sprinkle with peanuts; press lightly into frosting.



 Makes 30 cupcakes.


I made these cupcakes when my in-laws came
to visit. My MIL _loves_ peanut butter, and she _LOVED_ these.

I made my own frosting (from a recipe in the same book).
Yeah - I'm an over achiever like that. _smirk_
